The year 1989 brought sweeping change to the Hungarian national scene. A parliamentary democracy replaced forty years of communism. The change spread beyond the political realm and significantly influenced the everyday life of the Hungarian citizen, including their culinary world. Due to the change in the political scene, windows of communication to the rest of the world opened. New, and sometimes foreign, influences shaped and modified long-held traditions. Foreign nationals that settled in Hungary had a deep impact on the Hungarian cuisine.</p>
<p> Hungarian cuisine has been modernized by adding the global touch. Today, even the classic Hungarian dishes are prepared with a modern flair. The Hungarian culinary scene is diverse, creative and multicultural now. Yet, despite the influx of many international flavors, traditional style is still present. Retaining traditional ingredients such as paprika, sour cream, garlic, and onion as staples in the Hungarian diet, Hungarian chefs have been drawing inspiration from other cooking styles. They have relied on the flavors of the past, creating a style that is both nostalgic and modern.
<p>Hungarian cuisine has gotten a serious update. Today, Hungarian food is cosmopolitan. It introduces ingredients that are indigenous to other countries, but that suit the Hungarian taste and personality. The cuisine is in constant revolution but what stays the same is the traditional
foundation. </p>
<p>A new era of Hungarian cuisine has been launched. </p>
