<p style="margin: 1 5"><font face="Verdana" size="2">Have you ever found
yourself breaking out in hives? You may have had an allergic reaction to
food. Symptoms range from a tingling sensation in the mouth, swelling of
the tongue and the throat, difficulty breathing, hives, vomiting,
abdominal cramps, diarrhea, drop in blood pressure, loss of consciousness,
to death. Symptoms typically appear within minutes to two hours after you
have eaten the food to which you are allergic.<br>
<br>
A food allergy is our body�s response to a food that it mistakenly
believes is harmful. Once our body�s immune system decides that a
particular food is harmful, it creates specific antibodies to it. And the
next time the individual eats that food, the immune system releases
chemicals to try to protect our body. These can trigger the cascade of
allergic symptoms mentioned earlier. <br>
<br>
Scientists estimate that between 6 and 7 million Americans suffer from
true food allergies. At the present time, there is no cure for food
allergy. Avoidance is the only way to prevent an allergic reaction.
Although an individual could be allergic to any food, such as fruits,
vegetables, and meats, they are not as common as the following eight foods
which account for 90 percent of all food-allergic reactions:</font></p>

In a study conducted by The Food Allergy & Anaphylaxis Network (FAAN),
where 129 families were randomly selected from FAAN�s National Peanut and
Tree Nut Allergy Registry, sixty-seven percent of the reactions were
caused by peanuts, 24 percent were caused by tree nuts, 9 percent by
possibly both peanuts and tree nuts. Reactions mainly occurred in Asian
restaurants, ice cream shops, and bakery/donut shops. In 50 percent of the
reactions the foods were �hidden� in sauces, dressings, or in egg rolls.
Desserts accounted for 43 percent of the reactions, followed by entr�e 35
percent, appetizer 13 percent, and other 9 percent. The reactions were
caused by the food allergic individual not telling the wait staff about
their food allergy; cross contamination, primarily from shared ice cream
equipment and from cooking/serving supplies; and establishment error.<br>
<br>
When you eat out at a restaurant, it is important to mention any food
allergies you have to the wait staff so that they can list off the
ingredients of menu items in question and describe to you how it is
prepared. We are encouraging food establishments to post reminders to urge
customers to speak up about their food allergies, which can be posted on
the menu or table tent.<br>
<br>
Reading food labels is the primary means of avoiding food allergens in
packaged foods. Reactions can range from mild to life-threatening or
fatal. It is estimated that severe allergic reactions to foods lead to
30,000 emergency visits to hospitals each year and 150-200 deaths. The
Needham Health Department is currently working with retail food
establishment managers in posting the ingredients of baked items they sell
on site so that it will be easier for people who have food allergies to
know exactly what is in the baked item they may be interested in buying.
